Trim the tops off the peeled onions, leaving the roots intact. Cut down into each onion 8 times to create petals, stopping before the root.
Mix the flour, paprika, garlic powder, salt, and cayenne in one bowl. Whisk the eggs and milk in a second bowl. Place breadcrumbs in a third bowl.
Coat each onion first in the seasoned flour, tapping off the excess.
Dip the floured onion into the egg wash, making sure it gets between the petals.
Press the onion gently into the breadcrumbs until fully coated. Preheat the air fryer to 375°F.
Place the onions in the basket, spray generously with cooking oil, and cook for 10-12 minutes until crispy and golden.
