Ingredients

  • 1 lb lean ground turkey
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 0.5 cup light mayonnaise
  • 0.25 cup Thai sweet chili sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 2 cups jasmine rice cooked and warm
  • 1 cup carrots shredded
  • 1 cup English cucumber diced

Equipment

  • Large skillet
  • Small mixing bowl
  • Whisk

Method

  1. Whisk the mayonnaise, sweet chili sauce, sriracha, and rice vinegar together in a small bowl to create the bang bang sauce. Set aside.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the minced garlic and ginger, cooking for 30 seconds until fragrant.
  3. Add the ground turkey to the skillet, breaking it apart gently. Let it sear undisturbed for 3 minutes.
  4. Toss and cook the meat until completely browned and no longer pink inside.
  5. Reduce the heat to low. Pour half of the prepared sauce into the skillet, stirring to coat the meat evenly until warmed through.
  6. Serve by dividing the warm rice among bowls, topping with the glazed meat, shredded carrots, and diced cucumbers. Drizzle the remaining sauce on top.

Notes

  • Do not let the sauce boil in the skillet, or the mayonnaise will separate and turn oily.
  • Keep the fresh vegetables separate from the meat if storing leftovers for meal prep.
