Ingredients

  • 1 pound rotini or fusilli pasta
  • 3 cups fresh broccoli florets Chopped small
  • 1 cup cherry tomatoes, halved
  • 0.5 cup red onion, finely diced
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • Large boiling pot
  • Colander
  • Large mixing bowl

Method

  1. Boil the pasta in a large pot of salted water according to the package directions for al dente.
  2. Blanch the chopped broccoli by adding it to the boiling pasta water during the final 60 seconds of cooking.
  3. Drain the pasta and broccoli together, then rinse immediately under cold water to stop the cooking process.
  4. Whisk the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper in a large bowl to create the dressing.
  5. Toss the cooled pasta, broccoli, cherry tomatoes, and red onion into the dressing until completely coated. Chill before serving.

Notes

  • Ensure the pasta and broccoli are completely dry after rinsing so the dressing does not become watery.
  • If the salad dries out in the fridge, stir in a splash of milk before serving.
