Ingredients

  • 4 cups fresh zucchini, grated About 3 medium zucchinis
  • 2 large eggs Lightly beaten
  • 2 cups shredded mozzarella cheese Divided
  • 0.5 cup grated Parmesan cheese
  • 1 pound lean ground turkey
  • 1 cup sugar-free pizza sauce
  • 0.5 cup turkey pepperoni slices
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt For drawing water out of the zucchini

Equipment

  • 9x13-inch baking dish
  • Clean kitchen towel
  • Large skillet

Method

  1. Preheat your oven to 400 degrees Fahrenheit and grease a 9x13 inch baking dish.
  2. Salt the grated zucchini, let it sit for 10 minutes, then forcefully wring out the excess water using a clean kitchen towel.
  3. Mix the dry zucchini shreds with the eggs, Parmesan cheese, and 1/2 cup of mozzarella. Press the mixture into the baking dish and bake for 20 minutes.
  4. Brown the ground turkey in a skillet over medium heat. Drain excess fat, then stir in the pizza sauce, oregano, and garlic powder.
  5. Layer the meat sauce over the baked zucchini crust, top with the remaining mozzarella and pepperoni slices.
  6. Bake for another 15 minutes until the cheese is melted and bubbling. Let it rest for 10 minutes before slicing.

Notes

  • Squeezing the zucchini completely dry is the most important step to prevent a soggy casserole.
  • Allowing the dish to rest after baking helps the slices hold their shape.
