Ingredients

  • 4 boneless skinless chicken thighs
  • 0.5 cup low-sodium soy sauce
  • 0.25 cup pineapple juice
  • 2 tbsp brown sugar, packed
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 4 rings fresh pineapple Core removed
  • 1 large red onion, sliced into rings
  • 2 cups jasmine rice, cooked
  • 1 tbsp toasted sesame oil

Equipment

  • Cast-iron skillet or grill
  • Small saucepan
  • Mixing Bowl

Method

  1. Whisk the soy sauce, pineapple juice, brown sugar, ginger, garlic, and sesame oil together in a bowl. Reserve half of the mixture in a small saucepan.
  2. Marinate the chicken thighs in the remaining liquid for at least 30 minutes in a shallow dish.
  3. Simmer the reserved sauce over medium heat until it reduces by half and becomes glossy.
  4. Grill the marinated chicken in a skillet over medium-high heat for 6 minutes per side. Add the pineapple rings and onion slices during the last 3 minutes to char lightly.
  5. Assemble the stacks by layering compacted rice, an onion ring, a chicken thigh, and a pineapple ring. Drizzle with the reduced glaze to serve.

Notes

  • Keep your pan heat moderate to prevent the sugar in the marinade from burning.
  • Use a small measuring cup to pack the rice tightly so it holds its shape on the plate.
