  • 2 large chicken breasts, diced
  • 3 medium zucchinis, chopped into half-moons
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup shredded mozzarella cheese Optional for topping

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit and ensure your chicken and zucchini are chopped into uniform pieces.
  2. Toss the diced chicken and zucchini in a bowl with olive oil, garlic powder, oregano, salt, and pepper until coated.
  3. Spread the mixture evenly in a 9x13 inch baking dish without crowding.
  4. Bake uncovered for 25 minutes. If using cheese, sprinkle it on top during the last 5 minutes.
  5. Rest the dish for 5 minutes before serving to allow juices to settle.

Notes

  • Cut zucchini thick to prevent it from becoming mushy.
