Ingredients

  • 1 can (20 oz) pineapple rings in juice, drained or 8 fresh rounds, 1/2 inch thick
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 3/4 cup cold sparkling water or plain cold water
  • 1 large egg
  • 1 tsp vanilla extract
  • vegetable oil for frying 2 to 3 inches deep in pot
  • powdered sugar for dusting

Equipment

  • Heavy pot or deep skillet
  • Cooking thermometer
  • Wire rack
  • Slotted spoon
  • Mixing Bowl

Method

  1. Pat pineapple rings completely dry on both sides using paper towels.
  2. Whisk flour, cornstarch, sugar, baking powder, salt, and cinnamon together in a bowl.
  3. Add egg, vanilla, and cold water. Whisk until just combined with a few small lumps remaining.
  4. Heat oil in a heavy pot to 370°F.
  5. Dip each pineapple ring into the batter, let excess drip off, then lower gently into the hot oil.
  6. Fry 2 to 3 rings at a time for 2 to 3 minutes, turning once, until deep golden. Drain on a wire rack.
  7. Dust with powdered sugar while hot and serve immediately.

Notes

  • Always pat pineapple completely dry before battering.
  • Keep oil at 370°F throughout and fry in small batches.
  • Use cold water or sparkling water for a lighter, crispier batter.
  • Serve immediately for best texture - these do not hold well.
