Ingredients
  

  • 1 1/2 cups all-purpose flour plus 1 extra tablespoon
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter melted and slightly cooled
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 3 medium overripe bananas mashed
  • 1/4 cup sour cream or plain Greek yogurt
  • 1 cup fresh strawberries diced small

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit and grease a 9x5-inch loaf pan.
  2. Mix the melted butter, sugar, eggs, vanilla, mashed bananas, and sour cream in a large bowl.
  3. Fold the dry flour mixture (1 1/2 cups flour, baking soda, salt) gently into the wet ingredients.
  4. Toss the diced strawberries in the remaining tablespoon of flour, then fold them carefully into the batter.
  5. Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean, tenting with foil if it browns too quickly.

Notes

  • Always let the bread cool completely before slicing to prevent the warm, moist structure from crumbling.
