Ingredients

  • 2 cups waffle batter prepared from mix or homemade
  • 8 oz cream cheese room temperature
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries finely diced and dried
  • 0.5 cup graham cracker crumbs
  • 2 tbsp unsalted butter melted
  • 1 spray non-stick cooking spray

Equipment

  • Waffle Iron
  • Mixing bowls
  • Hand mixer

Method

  1. Beat the room temperature cream cheese, powdered sugar, and vanilla extract in a bowl until completely smooth.
  2. Fold the finely diced strawberries gently into the cream cheese mixture and set aside.
  3. Mix the graham cracker crumbs with the melted butter in a small dish until it resembles wet sand.
  4. Preheat your iron to medium-high and coat generously with non-stick cooking spray.
  5. Pour a thin layer of batter onto the bottom plate. Drop 2 tablespoons of the cream cheese filling in the center, and top with a spoonful of the graham cracker mixture.
  6. Pour a second thin layer of batter over the filling to seal it. Close the lid and cook for 4 to 5 minutes until the steam stops escaping.

Notes

  • Leave a 1-inch border around the filling so the top and bottom batter layers can seal together properly.
  • Freeze leftovers and reheat them directly in a toaster to maintain the crispy exterior.
